Mofongo Ingredients

  • 2 Green Bananas
  • 500 gr Bacon
  • 20 gr Salt
  • 20 gr Pepper
  • 300 ml Oil
  • 3 Garlic Cloves
  • Lime juice

How to Make Mofongo - Step by Step

  1. In a mixing bowl add the pork bacon, lime juice, salt and garlic cloves. Cook for 15 minutes in the air fryer until crispy.

  2. Peel the green plantains by cutting off the ends and making a shallow cut along the length of the skin. Carefully remove the skin by pulling it away from the flesh.

  3. Cut the plantains into 1-inch thick slices and set them aside. In a large frying pan, heat 4 tablespoons of olive oil over medium-high heat. Add the plantain slices and fry them until they become golden and slightly crisp on the outside, about 5-7 minutes.

  4. While the plantains are frying, peel and crush the garlic cloves using a mortar and pestle. Add olive oil and salt to create a paste.

  5. Using a wooden mortar pestle or the back of a large spoon, mash the plantains until they form a smooth, dough-like consistency. Add the pork cracklings or bacon bits to the mashed plantains and mix them in.

  6. Once the mofongo is well-mixed, shape it into small balls. Cook for 20 minutes in the air fryer.

  7. Serve the mofongo hot as a side dish or a main course. ENJOY!
