Yuca con Mojo


    Ingredients
  • 1 1/2 lbs LaFe yuca
  • 1 teaspoon salt
  • Juice of 1 Lime
  • 6 garlic cloves, mashed
  • 1 teaspoon salt
  • 1/3 cup fresh lemon juice
  • 6 cups of water
  • 1/2 cup olive oil
  • 1 onion, chopped fine
  • Change Measurements: US | Metric

Preparation
Place yuca in saucepan and add water until yuca is just covered, add salt and lime juice and bring to a boil. Reduce heat, cover and simmer until tender-about 30 minutes. Drain and keep warm. Mash garlic cloves into salt with mortar and pestle (or use food processor). Add garlic, lemon juice, and onions to olive oil in a separate pan, heat until bubbling, then pour over yuca. Toss yuca & sauce "lightly" cooking to saute over medium heat; till barely brown but not CRISP! Serve and enjoy.

Seafood Salad


    Ingredients
  • 1 lb. ( 1 Bag) LaFe Seafood Combination (thawed)
  • 3-4 Tbsp. Red Wine Vinegar
  • 3 Cloves Garlic, chopped
  • 1/2 cup Chopped Flat Parsley
  • 1 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 1/2 Medium Red Onion, sliced
  • 1/3 Cup sm. Black Olives, pitted
  • 1/3 Cup sm. Spanish Olives, pitted

Preparation
Place LAFE Seafood Combination in medium bowl with all ingredients. Toss well and refrigerate for 1 hour before serving.
